The local peach crop is in and this is one of the sweetest crops we can remember – can’t get enough of them! Chilled or grilled, baked, blended or puréed, they work in salads, entrées and desserts.

We love this combination of fruits and veggies for a refreshing summer salad.

Summer Peach, Berry and Feta Salad with Maple Dressing

Dressing:
1 T maple syrup
¼ C olive oil
3 T balsamic vinegar
½ t kosher salt
½ t ground black pepper

Salad:
4 fresh peaches, halved and pitted
3 T maple syrup
8 C spring mix salad greens
½ C Feta cheese, crumbled
½ C cherry tomatoes, halved (if desired — we definitely say yes!)
½ C blueberries or blackberries

Optional: ½ C pecans, toasted and chopped

Brush peach halves with 3 T of the maple syrup and grill on a well-greased grill for 8 minutes or until tender. Turn frequently. Cool and cut each half into wedges.
Whisk together all dressing ingredients. Add salad greens and toss.
Place greens on serving platter. Top with peaches, goat cheese, tomatoes, blueberries (and pecans if using them).

Note: Grilling the peaches with maple syrup adds so much flavor and goodness. But if you are in a hurry, just wash and cut peaches into wedges and serve on salad.
